Frozen S'Mores

I love Cool Whip and I love S'Mores. So combining them into ones dessert seemed like a fantastic idea. Especially since it has been waaay to hot in Iowa lately.

Ingredients
1 jar of marshmallow cream/fluff
1 tub of Cool Whip (I always buy the lite)
1 box of graham crackers
1 bag of melting chocolate or chocolate chips

Instructions
1. Begin melting the chocolate. One of my favorite ways to melt melting chocolate is in a zip lock bag in the microwave. Microwave for a 45 seconds the first time, and then 30 seconds at a time until chocolate is melted. It helps to "massage" the chocolate between cycles. This is also a good tutorial for melting chocolate chips or melting chocolate.

2. Place a tablespoon of marshmallow fluff on one graham cracker and a tablespoon of Cool Whip on the another graham cracker and then sandwich them together.

3. Dip the sandwich into the melted chocolate. I love this Wilton Melting Chocolate pot I received for Christmas!

4. Place sandwiches on a cookie sheet lined with wax paper or parchment paper, and then set in the freezer. I froze my sandwiches for 20 minutes and it allowed the chocolate to be good and hard, and cold, but the inside was still soft. If you want it to be more like an ice cream sandwich freeze for at least 4 hours or over night.

  2. We just got back from vacation where we made s'mores often at our cabin. I might have to just make these this week for a quick alternative and we can pretend we're in Alaska again ;)
